Commis kitchen was started by Chloe Pendergast to offer fresh, farm-to-table cooking directly to Los Angelenos.

Chloe is a private chef and hospitality consultant based in Los Angeles. Her cooking is guided by a joy for life, rooted in the bounty of California she grew up in and shaped by her time cooking in Italy. It’s simple, honest, seasonal food that tastes like where it comes from.

After graduating from Cornell’s Hotel School of Administration, she began her career in the dining room at Eleven Madison Park in New York, where she learned the power of hospitality and the magic in details.

She went on to help launch restaurants and the first hotel for Restoration Hardware — shaping everything from concept and menu development to hospitality design and wine programming.

Eventually, she traded late nights for farm kitchens at Spannocchia in Tuscany, cooking on a regenerative farm and grounding her approach in slow food.

In February of 2026, Chloe assisted Noma in their Los Angeles residency, working service and diving further into her love for Los Angeles, bountifulness, and the way place shapes taste. Here she picked up new perspective on produce, foraging, and fermentation, which has given her a thoughtful and new approach to creativity in the kitchen.

Now, she runs her own private cooking practice in Los Angeles, bringing those experiences together in generous, seasonal meals that care deeply about the details, and the people around the table.
